Gajrella also known as Gajar wali Kheer (Carrot Rice Pudding) is a traditional Pakistani dessert made primarily with grated carrots, milk, sugar, and butter/ghee. It has a pudding-like consistency due to the higher ratio of milk. The mixture is simmered until the milk thickens and the carrots and rice have softened, it’s flavoured with cardamom and a mixture of nuts to give it texture.
